Salmon Ummm-Good
I tried this recipe on salmon filets but it might work on salmon patties also.
Ingredients:
Approximately 2 lbs salmon filet
1/2 sleeve of crackers (Saltines, Club, Ritz, etc.) which ever one prefer
1 - 1 & 1/2 tsp cinnamon
1 - 1 & 1/2 tsp nutmeg
2 large eggs
Nucoa margarine (made for cooking)
Directions:
Crush crackers to fine texture, mix cinnamon and nutmeg with crackers in a glass bowl.
Beat 2 eggs in another glass bowl.
Slice filets about 3/8 - 1/2 inch thick, then cut into three or four inch squares.
Melt one stick of margarine in a med - large frying pan (medium to medium high heat)
Dip salmon into egg.
Roll salmon into cracker mix.
Place into frying pan and cook to a golden brown on each side, remove from pan and place on a paper towel to drain.
Serve with choice of vegetable, rice and if you like, a wedge of lemon.
